7 Ingredient hummus and veggie wraps

Ingredients:

1 tortilla wrap (I used BFree Gluten Free Multigrain Wraps)

1-2 tbsp Hummus
1 tbsp Spiced chickpeas (I used black chickpeas, cooked in a pan with paprika, cumin and coriander)

Julienned or grated carrot

Greens of your choice (I used baby spinach and rocket, tossed through with olive oil and lemon juice)

Thinly sliced apple (Optional)

Toasted pumpkin and sunflower seeds
 
Method:

Spread the hummus evenly over the wrap.

Sprinkle the spiced toasted chickpeas over the hummus layer. Add the carrot on top. Pop in your handful of chosen greens.Here you can add the sliced apple on top for an extra crunch and sweetness.Sprinkle over the toasted pumpkin and sunflower seeds.

Carefully roll up the tortilla tightly, folding in the sides as you go to create a tight wrap. Pop your wrap into a medium pan with a tiny splash of oil for a final sizzle, giving it that irresistible crispiness on the outside while keeping all the goodness tucked away inside.

Serve immediately and enjoy!
