Gluten and Dairy Free Pancakes

Ingredients
75g GF Plain Flour
60ml Plant based milk
10g Melted Dairy Free Butter
1 Egg
1 Tsp GF Baking Powder
1 Tsp Sugar
Method
Melt the dairy free butter and set aside to cool. Mix together the flour, sugar and baking powder. In a jug whisk the dairy free milk, egg and cooled melted butter. Add the wet mixture to the dry and mix until it all comes together in a smooth batter.
Pre-heat a medium sized frying pan add a drop of flavourless oil and start to cook the pancakes adding a small amount of batter to the pan making even sized pancakes. Once bubbles appear on the surface flip the pancake using a spatula and cook them evenly on both sides. Transfer to a plate and keep them warm in oven and repeat with the rest of the batter.
Stack the pancakes up and top with either sweet or savoury toppings and drizzle over some maple syrup and enjoy!
