Spanish Style Fritatta

A weekly staple in my house that's totally naturally gluten and dairy-free - a Spanish style frittata! It's such a versatile dish that's perfect for any time of day, and it's so easy to make. Here's what you'll need:

Ingredients:

1 large onion, sliced

2 medium-sized potatoes, peeled and thinly sliced

6 large eggs

2 tbsp olive oil

Salt and pepper to taste

Directions:

Preheat your grill or oven to 180°C (350°F or Gas Mark 4). Then, heat up some olive oil in a large frying pan over medium heat. Add in your sliced onions and potatoes, and season with salt and pepper. Let them sauté for 10-15 minutes, or until they're tender and nicely browned.

While that's cooking, whisk up your eggs in a separate bowl and season them with salt and pepper. Once your veggies are done, pour the egg mixture into the pan and give everything a gentle stir to make sure it's evenly distributed.

Let the frittata cook for 5-7 minutes, or until the eggs are set around the edges but still a bit runny in the middle. Then, pop the whole pan under the grill or into the oven and let it cook for another 10-15 minutes until it's golden brown on top and fully cooked through.

Once it's done, take it out of the oven and let it cool for a few minutes before slicing and serving. Enjoy!

NB. Feel free to experiment with different veggies and seasonings to make it your own.
