Roasted Garlic Hummus

Ingredients:

Bulb of Garlic

1 Can of Chickpeas (drained and rinsed)

1 Lemon (Juiced)

2tbsp Tahini

Drizzle of Olive Oil

Salt to taste

 

Directions:

Cut off the tip of the garlic bulb so that the tops of most of the cloves are slightly exposed. Drizzle olive oil over and wrap securely in greaseproof paper. Roast the garlic in oven for 30 mins to 1 hour. Remove and allow to cool.

Add the chickpeas, lemon juice, tahini, a couple of the roasted garlic cloves and salt to a food processor. Pulse to start with for around 1 minute.

Check the consistency and scrape down the sides of the processor and pulse again until all the ingredients are combined.

Whilst the food processor is still running if you find the texture is too thick you can drizzle in a little olive oil and mix. (Don’t add in too much at a time, as you want it to allow the mix to combine before adding more) Once you’ve reached your desired texture and consistency. Serve and enjoy!

Optional serving suggestion: Sprinkle with paprika and chopped parsley.
